Instant Pot Beef Stew is one of my family’s favourite meals.
And it doesn’t matter if it is the 40 degrees outside because cooking my family’s favourite meal in the Instant Pot means not heating up the whole house!
This Instant Pot Beef Stew was adapted from my original stew recipe which took hours to slow cook on the stove.
Instant Pot Beef Stew
Get ready to enjoy a nice hearty meal packed with flavour in a snap.
My Instant Pot Beef Stew is a perfect meal to fill your family’s belly with little effort and time.
You can even save some time by skipping the saute steps and just drop everything into the pot, set it and forget it!
Gather your ingredients and prep them.
Add some olive oil to your pot and turn on the saute function.
Saute your onions and garlic for 2-3 minutes.
Add in your carrots and saute for another 2 minutes.
Pour in your stock or water and Club House Beef Stew mix, then stir.
Toss in your potatoes and beef.
Give everything a good stir.
Press the meat/stew button on your Instant Pot and set for 35 minutes.
Your Instant Pot will turn on and will start to build pressure.
Ensure you have your pot set to the sealing position or it won’t come to pressure.
Once it has come to pressure the little red pressure valve will pop up and the timer will start to count down.
Once it has finished cooking for 35 minutes it will switch to the keep warm function.
The timer will now start to count up.
You want to let the pressure release naturally for 15 minutes.
While you are waiting for the 15 minutes to pass make your roux.
When the timer shows 15 minutes you can quick release any remaining pressure.
Open your lid carefully and give the stew a stir.
If you want to add in peas or corn, you can do so at this stage.
Add in your roux, a little bit at a time.
Stir after each addition of roux until your desired thickness is achieved.
Sprinkle with some parsley and serve with some fresh bread!
Instant Pot Beef Stew
This Instant Pot Beef Stew is pure comfort food!
Ingredients
Instant Pot Beef Stew
- 11/2 lb Stewing Beef cut into bite-sized pieces
- 1 Large Onion finely chopped
- 5-6 Cloves Garlic finely chopped
- 4 Carrots cut
- 4-5 Medium Potatoes cut into bite-sized pieces
- Olive Oil
- Salt and Pepper to taste
- 4 cups beef stock or you can use 4 cups of water with 1 pkg of Club House Slow Cookers Beef Stew mix
- 1/2 Cup Frozen Peas optional
- 1 Can Corn optional
Roux For Gravy
- Butter
- Flour
Instructions
Instant Pot Beef Stew
- Turn your Instant Pot on sauté, add in some olive oil and wait for the display to say hot. Once hot add in your onions and garlic, sauté for 2-3 minutes.
- Next, toss in your carrots and sauté for another 2 minutes.
- Add in your 4 cups of beef stock. If using the Club House Beef Stew mix, add the package to 4 cups of water and whisk until combined, then pour into your pot.
- Next, add in your beef and potatoes, give everything a good stir.
- Using the meat/stew button on your Instant Pot, set it for 35 minutes. Ensure your vent is set to the sealing position.
- When the 35 minutes is up you will want to let your pot naturally release pressure for 15 minutes. The timer will start to count up, when it reaches 15 minutes you can proceed to quick release the remaining pressure and turn off/unplug your Instant Pot.
- If wanting to add peas or corn you can do so at this point, then give a good stir. They will cook as you make your roux to thicken the gravy.
Roux For Gravy
- In a small pot on your stove on medium heat add in a chunk of butter and let it melt.
- Once melted add in one spoonful of flour at a time, stirring until fully mixed each time. Do this until you get a semi-thick paste.
- Add your roux into your stew and mix well until your stew thickens, then serve and enjoy!
Notes
Remember the cook time does not include the time it takes for your pressure cooker to come to pressure. The time it takes to come to pressure will vary.
